As a long-time cottage cheese fan, I am so glad the rest of the world is starting to catch on. But if you find yourself still on the fence about it, I think these Cottage Cheese and Fruit Parfaits are a great starting point for giving it a try. The sweet and savory combo is just so good. Just throw cottage cheese into a blender, food processer or use an immersion blender and blend until silky smooth. Use this whipped cottage cheese as you normally would.

Ingredients
Strawberry Cottage-Cheesecake:
2 tablespoons graham crackers crumbs
1/2 cup sliced strawberries
1 cup cottage cheese
1 tablespoon strawberry jam
Peach Honey Almond Granola:
1/2 cup sliced peaches
1 cup cottage cheese
1/4 cup almond granola
1 teaspoon honey
Tropical Pineapple:
1 cup cottage cheese
1/2 cup diced pineapple
1 tablespoon shredded coconut
Instructions
- Trim and slice any fruit needed.
- Layer fruit with cottage cheese and any other ingredients in a serving glass or sealable container.
Notes
For meal prep: make parfaits only 1 to 2 days in advance so the fruit juice does not cause the cottage cheese to split. Package any dry ingredients separately and top off the parfait before serving.
