Description
This Avocado Pizza with Ricotta and Honey is creamy and satisfying, yet light and refreshing at the same time. A great lunch or light dinner for hot weather.
Ingredients
Scale
- 1 package of pizza dough, homemade or store-bought (~300g)
- 1 tablespoon olive oil
- 3/4 cup ricotta cheese
- 1 ripe avocado, very thinly sliced
- 1 lime, cut into wedges
- sprinkle of salt
- thinly sliced jalapeno
- chili flakes
- honey
- fresh cilantro
Instructions
- Bake the crust: Roll out the pizza dough to your preferred thickness. I like thin crust and ended up with an approximately 8″ round crust. Transfer to a baking sheet and brush with olive oil. Bake the crust according to the dough instructions, until golden brown and fully cooked. Allow to cool almost completely before topping.
- Add toppings: Dollop ricotta cheese onto the cooled crust and then smooth out with a spoon to evenly cover the pizza. Fan out the thinly sliced avocado and arrange it in a circle around the center of the pizza (don’t worry if there is a hole in the middle, we will fill this with cilantro). Squeeze a lime wedge over the entire pizza (this helps prevent the avocado from browning as well as adds flavor!), then season it well with salt.
- Garnish: Lay jalapeno slices evenly on top of the avocado. Sprinkle the pizza with chili flakes and drizzle with honey. Finally, pick the cilantro leaves from the stem and pile them in the center of the pizza.
- Serve: Cut pizza into slices, serve with additional lime wedges and enjoy!
Notes
Storage: this pizza is best eaten immediately but leftovers may be refrigerated in an airtight container 1-2 days.
Make ahead: I would not recommend making this entire recipe ahead of time, however the pizza crust can be pre-baked then finished with toppings right before serving.
